King Arthur Flour is American’s oldest flour company! They started in 1790 (what?! the 1700s, people!!) Thankfully, their website puts that date into perspective: George Washington had just become president. I’ll let you sit and think about that for a moment, haha. For a company to be around that long… you know they must really know their stuff!

The customer service at King Arthur Flour is invaluable. They’re personal and friendly and enthusiastic. This company is 100% employee owned and is located in Vermont. I love their products because they’re pure and natural–no bleach, bromate, preservatives or unnecessary chemicals are added–and they use only the finest wheat!
I love their website–it’s completely user-friendly and not only can you shop their products, but you can find lots of information and delicious recipes! For my review, I was sent a little cupcake making kit. YUM! We got a 12-cup muffin pan, a chocolate fudge frosting mix and an all-natural golden vanilla cake mix. I picked those items because yellow cake with chocolate frosting is my favorite! And who doesn’t love a cupcake?! But there are so many amazingly delicious looking mixes and frosting, it was really hard to decide!
Time to try it out! It was really easy to make and I felt better using this fancy all-natural stuff than using a box from the grocery store. For the cake mix, you just add butter, milk and eggs… fill your cupcake/muffin pan… and bake!

The buttercream frosting says it will frost a 9×13 inch sheet cake or an 8 or 9-inch layer cake. I had PLENTY of frosting for my cupcakes. I packed that frosting on and still had some left. Um, yes, I saved it, don’t be crazy. Chocolate-fudge frosting and graham crackers, anyone? YUM.
The frosting recipe has you add butter AND shortening. We have no shortening… I could have used all butter, but I didn’t have enough! So what else to use? Hmmm. After some searching online for substitutes I could use, I found… coconut oil! Hey, we just recently got some of that! I had never used it for baking and I asked on twitter if it would make my food taste like coconut (ew) and multiple people reassured me that it would NOT.

Those people? Were wrong. My husband came into the kitchen as I was frosting the cupcakes and asked, “what did you use in those that’s coconut?” WHAT?! He could smell it. Then we both tasted–yep, coconut. Sooo, unless you love coconut flavor and want some coconut-cupcakes, I wouldn’t recommend using coconut oil, hahaha.

But yummmmmmm were they good! The cake was moist and the frosting was rich and creamy. I brought them to an outing for the 4th of July and they were a big hit!
