making mealtime more special with Bertolli

I’ll be honest, I’ve never been a big fan of cooking. I’ve really tried to plan meal schedules to make sure I get necessary supplies at the grocery store each week and have something delicious planned for dinner each night… but it hasn’t worked out that well. I hate cooking. And now, as a mom (of almost 2! she’s due Friday!), it’s even harder to find the time to make dinner. My toddler is constantly at my feet–pretty much just like that Family Guy episode where Stewie sits there for an eternity: “Mom. Mom. MOM. Moooom. Mom. Mom.”

I think the best way to make mealtime more special is to make sure you’re spending more quality time with the family. Ya know, instead of getting frustrated at the cooking and the whining toddler at your feet. So I loooove quick meals that are delicious, good for us, and appear fancy as if I slaved in the kitchen all day ;)

I love soup–especially with the current cold weather! Bertolli has NEW frozen meal soups and you’d never guess they were frozen–they’re delicious! They’re hearty, fresh-tasting, filled with veggies, meats, herbs, and pasta, and (best part!) can be prepared in your kitchen in minutes.

It comes in 4 varieties: Chicken Minestrone, Roasted Chicken & Rotini Pasta, Tomato Florentine & Tortellini with Chicken, and Tuscan-Style Beef with Vegetables.

We recently tried the Tomato Florentine & Tortellini with Chicken and it was awesome. Even our 2-year-old said, “MMMMMM!”

You can heat it in the microwave it want this done SUPER fast, but I did the stovetop method. You empty the bag into a 2-quart pot and add one cup of water. Once it starts boiling, cover the pot and have it simmer for about 5 minutes. Done! It doesn’t get much easier. And? My toddler didn’t whine at my feet once ;)

I was totally craving a “comfort” meal so I simply added some garlic toast and lots of fruit to this soup for our dinner. Totally toddler friendly, too. You could add a million different things to this soup to make your meal more “gourmet,” if you wanted.
